The latest in the social media arena is the use of video on websites, and innkeepers in Colorado have discovered the benefits of using videos to better advertise the benefits of traveling bed and breakfasts.

Festive Gluten-Free Granola

Ingredients:
1 1/2 cups of gluten-free rolled oats
1c broken pecans or walnuts
1/4c raw sunflower seeds or pumpkin seeds or both
1/4c coconut (optional)
1 tbsp chia seeds (optional)
3 tbsp brown sugar
3 tbsp maple syrup
2 tbsp canola oil
1/4 tsp salt
3/4 c raisins/dried cranberries or both
Directions: Preheat oven to 250 F degrees. In a large bowl combine oats, nuts, seeds, coconut and brown sugar. In a separate bowl mix maple syrup, oil & salt; stir into the dry ingredients. Spread mixture on a rimmed cookie sheet and bake for one hour, stirring every 10mins. Remove from the oven and mix in raisins or other preferred dried fruits. Makes 12 1/4c Servings. Serve granola with milk or over yogurt.

Eastholme in the Rockies, Cascade (Colorado Springs area)

Amish Breakfast Casserole

Ingredients: 1 lb. sliced bacon, diced 1 med. Sweet onion 6 eggs, lightly beaten 4 c. frozen shredded hash brown potatoes 2 c. shredded mild cheddar cheese 1-1/2 c. small curd cottage cheese 1-1/4 c. shredded swiss cheese

Directions: In large skillet, cook bacon and onion until bacon is crisp, drain. Mix together the remaining ingredients, stir in bacon mixture. Transfer to a greased 9 x 13 pan. Bake, uncovered at 350 degrees for 35-40 minutes or until eggs are set and bubbly. Let stand 10 minutes before serving. Serves 8 - 10

Holden House 1902 Bed & Breakfast Inn, Colorado Springs
Ruffled Crepes Isabel

Ingredients: Crepes: 1 1/4 cups flour 2 Tablespoons sugar Pinch Salt 3 eggs 1 1/2 cups milk 2 Tablespoons melted butter 1 Teaspoon Lemon Extract (Optional) Egg Mixture: 7 eggs 1 1/2 cups milk 1/2 Teaspoon salt 1/4 Teaspoon pepper 1 Tablespoon Flour 6 slices cooked turkey bacon(crumbled) Sharp Cheddar Cheese Sour Cream for garnish Fresh Dill, Parsley or Tarragon Garnish

Directions: Blend or mix all crepe ingredients well. Let rest for approx. 5 minutes. Make 5 inch crepes using either a well greased skillet or crepe maker. Extra crepes may be stored in refrigerator for later use. Mix together all egg mixture ingredients except bacon and cheese. Generously grease 24 muffin tins with non stick spray. Press crepes into tins, lightly ruffling edges but being careful not to tear crepes. Place a small square of cheese in bottom of tin and pour egg mixture carefully into each muffin tin, filling just to below top of rim. Top with crumbled bacon (vegetarian bacon bits may be substituted). Temp. & Time: Bake at 375 degrees for 15-20 minutes or until mixture is firm and crepes are just lightly brown. Let cool slightly and carefully loosen crepe cups from muffin tins with a fork or knife, taking care not to break crepe edges. Remove from tins with a spoon, place 2 on each plate and top with a small dab of sour cream and chopped fresh dill, parsley or tarragon (We try and use herbs fresh from the garden). Number of Servings: Makes 24 crepe cups or 12 servings.

Simply driving the Gold Belt Tour in Colorado is an adventure in itself. While following historic railroad and stagecoach routes leading you to North America's greatest gold camps, you will find yourself traversing between narrow canyon walls and along excitingly steep drop-offs. Although the area is no longer bustling with the activities of the gold rush, you can still "strike it rich" with views of outstanding scenery and limitless recreational activities. As you drive the byway, watch for the hundreds of historic gold mines that surround the communities along the way. Get a real feel for the gold rush days when you visit Victor's National Historic District and Cripple Creek, the historical hub of the mining district and a National Historic Landmark. Most of the buildings built in the early 1900s have been restored to their original likeness, and will give you an authentic look at what life must have been like on the road to riches. Once you've discovered gold mining of the past, visit Victor's new active gold mine. See for yourself the toil and backbreaking labor that went into gold mining in the 1890s and how technology has improved the miner's endeavors today. (Photo left: Royal Gorge Bridge)

Mining isn't the only attraction from the past to be found on the byway. Get a glimpse of what life may have been like long before gold miners came to the area when you visit the three fossil finds located on the byway. See evidence of Earth's prehistoric life in the 80,000 fossilized specimens of tree stumps, insects, seeds and leaves at the internationally renowned Florissant Fossil Beds National Monument. It's a great place to stop for a picnic lunch and to learn about the past.

Communities along the byway supplement the rich culture of this area. Cañon City is currently the byway's largest community. The Royal Gorge Route Railroad is one of the city's most distinctive historic sites. You can go to the Santa Fe Depot to purchase tickets for a ride on the Royal Gorge Railroad. Enjoy community events such as the Music and Blossom Festival. In the summertime, old-fashioned entertainment thrives in Cañon City's Park. Visit the Rudd Family cabin, and then spend the afternoon shopping and exploring the city's two museums. For more history and museums, make a stop in Florence. The Pioneer Museum contains pieces of Florence’s past. The area downtown is filled with more shops and restaurants.

If you love the great outdoors, this is the place to be. Enjoy some great fishing, camping, and hiking areas. Or take advantage of the dirt roads for mountain biking and horseback riding. The drive can be a little nerve-wracking and you may find yourself holding your breath as you drive across the world's highest suspension bridge spanning the Royal Gorge 1,053 feet above the water of the Arkansas River. You can walk or drive over the bridge, or take the world's steepest incline railway to the bottom of the Royal Gorge. Breakfast Pizza
1 pound sausage
1/2 cup onions, chopped
1/2 cup green pepper, chopped
1 (4 ox.) can mushrooms, drained
1 (8 oz.) package crescent rolls
1/4 cup milk
4 eggs, beaten
8 oz. shredded mozzarella cheese

Directions: Brown sausage, drain, saute peppers, onions and mushrooms. Line a 9"x12" baking pan with crescent rolls, pat into pan. Pour on the sausage mixture, add combined eff and milk mixture, sprinkle cheese over the top. Bake at 325 degrees for 30 minutes.

Winding through the forests and mountains of the Rocky Mountain National Park, Trail Ridge Road/Beaver Meadow Road encompasses over 50 miles of beautiful landscapes. At Milner Pass, the byway meets the Continental Divide National Scenic Trail, which crosses approximately 3,100 miles ranging from the Canada-Montana border to the Mexico-New Mexico border. At elevations over 10,000 feet, this trail offers spectacular views of the Rockies and the meadows that lie at their base.
